Val’s Gluten Free Carrot Cake

Gluten-free carrot cake

Val, from Perth, Western Australia really enjoys cooking in her Ecopot hen exploring Australia in her motor home. Val’s especially fond of carrot cake and so are we. This is her gluten free recipe. Thanks Val.

Ingredients

1 orange
250 gm self raising flour, gluten free
1/2 tsp baking powder, gluten free
1 tsp cinnamon, ground
140 gm brown sugar
150 gm carrot, grated fine
100 gm dried apricots, sulphur free and quartered
3 tbsp canola oil
1 tbsp drambui

Cooking Instructions

  1. Zest and juice orange, reserve zest and 5 tbsps juice.
  2. In mixing bowl add flour, baking powder and cinnamon and mix.
  3. Add juice, brown sugar and canola oil to bowl, mix well.
  4. Add grated carrot, orange zest, and apricots to bowl, mix well.
  5. Grease small inner pot, base and sides.
  6. Spoon mixture into pot evenly and allow to sit.
  7. Half fill large inner pot with boiling water.
  8. Place small inner pot into large inner pot, lid on.
  9. Simmer pot for 25 minutes, lid on.
  10. Transfer pot to Ecopot, with lid on.
  11. Cooking time 3 hours.

HINT … Dust with icing sugar when serving and serve with a dollop of cream.
