Stuffed Mushrooms with goat cheese and prosciutto

Stuffed mushrooms

Alexis from Mildura gave us this easy to do recipe. Another tasty entrée or main.


6 large brown mushrooms stems removed
1/4 cup olive oil
1 tsp rosemary, chopped
2 tbsp chopped prosciutto
120 gm goat cheese
salt and pepper to taste

Cooking Instructions

  1. Boil 3 litres hot water in large inner pot.
  2. Toss mushrooms with oil and rosemary.
  3. Season with salt and pepper.
  4. Place mushrooms in small inner pot, add 2 tbsp water, cook for 3 to 4 minutes.
  5. Remove from heat, stuff each mushroom with equal amounts of goat cheese and sprinkle tops with prosciutto and place them back into small pot.
  6. Put small inner pot (lid on), on large inner pot and cook for a further 5 minutes.
  7. Transfer both pots to Ecopot, with lid on.
  8. Cooking time 1 hour.

HINT … Serve with a drizzle of extra virgin olive oil.
