Poached pears and caramel

Poached Pears in Caramel Sauce.


4 medium pears
1 1/2 cups brown sugar
1 tbsp grated ginger
2 tbsp unsalted butter cut into small pieces
pinch of cinnamon for garnish

Cooking Instructions

  1. In the small inner pot, stir together the sugar, ginger and butter.
  2. Cut each pear in half lengthwise and core.
  3. Place in small inner pot.
  4. Gently toss the pears with the sugar mixture and layer them cut side down.
  5. Cover and bring to a boil.
  6. Simmer 10 minutes.
  7. Place small inner pot on top of large inner pot half filled with boiling water.
  8. Transfer pots to Ecopot, lid on.
  9. Cook for 2 hours until the pears are tender when pierced with a knife.
  10. With a slotted spoon remove the pears to a bowl.
  11. Bring to a boil the caramel sauce.
  12. Reduce heat to low to keep sauce at a simmer.
  13. Shaking the pan fairly constantly, reduce the caramel sauce by one-third of its original volume (don’t let the caramel get too dark, or it will have a burnt taste), 2-3 minutes.
  14. Place 1-2 pear halves per person on individual plates.
  15. Spoon sauce over the pears, and sprinkle with cinnamon.
  16. Cooking time 2 hours.

HINT … Serve warm with custard or ice cream
