Margaret’s Choc Chip Muffins

Choc-chip muffins

Margaret, our office manager loves making these muffins. The office girls say that they go down really well at morning teatime. And…they stay nice and warm as Margaret brings them still in her Ecopot.


2 cups self raising flour, gluten free
2 eggs, separated
1 cup oat milk
1/4 tsp vanilla essence
2 tbsp choc chips
1 tbsp brown sugar

Cooking Instructions

  1. In mixing bowl sift flour and add sugar and salt.
  2. Make a centre well and add vanilla essence and eggs.
  3. Mix through with knife, combining all ingredients.
  4. Roll mixture onto dusted board, knead mix gently and roll mixture into muffin balls.
  5. With knife, make one muffin end into a flat surface and rest.
  6. Gently press choc chips into top of each muffin mix.
  7. Half fill large inner pot with boiling water.
  8. Grease small inner pot, base and sides and place muffin balls in pot, tightly.
  9. Place small inner pot into large inner pot, lid on. Simmer pot for 30 minutes, lid on.
  10. Transfer pot to Ecopot, with lid on.
  11. Cooking time 2 hours.

HINT … Serve with freshly sliced banana sprinkled with cinnamon.
