Marco’s Fig Jam

Fig jam

Our friend Marco from Five Dock, Sydney makes this delicious fig jam. When in plentiful supply, Marco buys up at the markets and goes into a jam making frenzy. He makes enough for the entire year and extra for relatives and friends. We love it and are sure you will also. Enjoy!

Ingredients

2 kgs fresh figs
1/2 lemon, sliced
1/2 tbsp bicarbonate of soda
3/4 kg castor sugar
1/2 litre filtered water
1 litre boiling water

Cooking Instructions

  1. In large mixing bowl add figs and sprinkle with bicarbonate of soda.
  2. Pour boiling water over figs and allow soaking for 1 hour.
  3. Drain figs and rinse them immediately in cold water.
  4. Discard used water.
  5. In large inner pot add filtered water and sugar, stir well and bring pot to boil.
  6. Add figs and lemon and stir occasionally.
  7. Simmer pot for 15 minutes, stir occasionally, lid off.
  8. Transfer pot to Ecopot, with lid on.
  9. Cooking time 6 hours.

HINT … Spoon figs from pot directly into sterilised jars. Spoon remaining syrup in pot over figs. Allow 10cm clearance from lid. Immerse now filled jars in hot water bath for 10 minutes. Great with gluten free toast for breakfast.
