Boiled Fruit Cake.

Ingredients

375g mixed fruit
3/4 cup brown sugar
1tsp mixed spice
grated orange rind
1/2 cup water or orange juice
1/4 cup brandy
125g butter
3 lightly beaten eggs
1 cup self raising flour
1/2tsp bicarb soda

Cooking Instructions

  1. Place dried fruit, brown sugar, mixed spice, orange rind, water, liquor, and butter in the large inner pot.
  2. Bring to boil and simmer uncovered for 5 minutes.
  3. Allow to cool.
  4. Mix in eggs.
  5. Sift in sifted flour and bicarb soda.
  6. Line the base of the round tin (refer accessories) with baking paper.
  7. Put mixture into tin.
  8. Lay a round of baking paper on top of cake then cover with another sheet of baking paper then put on lid.
  9. Clean large inner pot and place a trivet inside then put the cake tin on the trivet.
  10. Carefully pour enough hot water into the large inner pot to come half way up the side of the cake tin.
  11. Bring to the boil with the lid on then gently simmer for 30 minutes.
  12. Transfer to the Thermal Cooker for 3 hours minimum.
  13. Cooking time 3 hours.

HINT … Serve with a dollop of cream and French vanilla ice cream.
