Biddie’s Fragrant Chicken and Tomato Stew

Chicken and tomato stew

Our Pakistani friends Biddi and Nathan make this for all the Ecopot office staff at least once a fortnight. Living next door, we gave Biddi an Ecopot to experiment with some time ago, and she hasn’t stopped creating fantastic meals ever since. This is one of her gluten free dishes. We hope you enjoy.


1 tbsp olive oil
6 large chicken thighs, skinned
420 gm can tomatoes, diced
2 onions, diced fine
6 cloves garlic, diced
1 tbsp fresh ginger, diced fine
2 tsps cumin, ground
1 tsp turmeric, ground
1 tsp sea salt, 1 tsp ground pepper
1/2 tsp cardamom, ground
1 cinnamon stick
1/4 tsp cloves, ground
2 bay leaves
1/4 tsp nutmeg, ground

Cooking Instructions

  1. Using pestle & mortar grind onions, garlic and ginger into a paste.
  2. In large inner pot heat oil, add paste and stir well on medium heat.
  3. Add cumin, turmeric, salt, pepper, cardamom, cinnamon stick, cloves, bay leaves and nutmeg.
  4. Stir well for a few minutes.
  5. Add chicken to pot, coating thighs well with aromatic paste, stir for a few minutes.
  6. Add tomatoes to pot and stir through well.
  7. Bring pot to boil and simmer for 20 minutes, stir occasionally.
  8. Transfer pot to Ecopot, with lid on.
  9. Cooking time 2 hours.

HINT … Remove cinnamon stick and bay leaves before serving.
