Banana bread

Banana Bread.


2 cups self raising flour
1/2tsp bicarb soda
1/2 cup brown sugar
2 eggs
1/2 cup milk
3 small ripe bananas, mashed well
1 cup chopped dates

Cooking Instructions

  1. Grease the loaf tin (refer accessories) and line the base with baking paper or foil.
  2. Place the flour, soda and sugar into a bowl.
  3. Mix thoroughly with a fork.
  4. Whisk together the eggs and milk.
  5. Stir in the bananas and dates.
  6. Add this to the flour mixture and stir to combine, mixing gently.
  7. Spoon the mixture into the loaf tin.
  8. Cover with baking paper and place on lid.
  9. Place trivet in the large inner pot and place loaf tin on the trivet.
  10. Carefully pour hot water into the large inner pot so that the water comes approx. half way up the side of the loaf tin.
  11. Bring to the boil, covered and then simmer for 20 minutes.
  12. Transfer to the Thermal Cooker for 1 hour minimum.

    Allow to cool slightly before tipping out of pan.

  13. Cooking time 1.5 hour.

HINT … Serve with a dollop of cream or butter.
