Spinach and Artichoke Dip

Spinach and artichoke dip

Les from Meekatharra sent us this one. He says he loves snacking on the dip whilst watching sports on TV at night after a hard day’s work in the mines.


1/2 cups shredded mozzarella cheese
1/4 cup sour cream
1/4 cup parmesan cheese, grated
1/4 tsp freshly ground black pepper
3 roasted garlic cloves
1 can artichoke hearts (in water) drained, chopped finely
500 ml light cream cheese
3/4 cup spinach
tortilla chips

Cooking Instructions

  1. In small inner pot, combine 1 cup mozzarella, sour cream, 2 tbsp parmesan cheese, pepper, garlic, artichoke hearts, cream cheese and spinach.
  2. Stir till thoroughly blended.
  3. Sprinkle with remaining mozzarella and parmesan cheese.
  4. Simmer for 15 minutes.
  5. In large inner pot put 3 litres of water bring to boil.
  6. Sit the small inner pot on top of large inner pot with lid on and simmer for another 10 minutes.
  7. Transfer inner pot to Ecopot, with lid on.
  8. Cooking time 2 hours.

HINT … Serve with gluten free tortilla chips.
