Scott’s Vegetable and Mince Pasta

Vegetarian mince pasta

When we receive these simple, quick and easy recipes, its difficult leaving them out of the book. They are always amongst our reader’s favourites, especially when camping or boating. Once again, thanks goes out to the Scott family for this one.


2 tbsp olive oil
500 gms topside mince
1 onion, sliced
1 potato, chopped fine
150 gm pumpkin, chopped fine
1 carrot, grated
400 gm can tomato soup salt and pepper to taste tsp chilli powder
1/2 cup white wine
1 tsp oregano
1 tsp parsley, chopped
1 sachet tomato paste
1 1/2 cups pasta, spirals

Cooking Instructions

  1. Heat oil in large inner pot, add onion and cook until translucent.
  2. Add mince and brown.
  3. Add all remaining ingredients (except pasta) and bring to boil.
  4. Simmer for 10 minutes.
  5. Meantime, in small inner pot, add 3 cups of boiling water with pasta.
  6. With 2-3 minutes simmering time remaining, place small inner pot into large inner pot.
  7. Transfer both pots to Ecopot, with lid on.
  8. Cooking time 3 hours.

HINT … The Scott’s suggest serving with a crispy green salad, crunchy bread and a glass of your favourite wine.
