Anne May’s Vegetable Goulash

Vegetarian goulash

Anne May from Tin Can Bay, Queensland sent this easy to make goulash dish in. We tried it. Easy to make and packed full flavour. Anne, thanks for this one and keep them coming, we want more!

Ingredients

1 tsp oil
425 gm can kidney beans, undrained
1 onion, chopped
2 green capsicums, chopped
2 carrots, chopped in quarters
200 gm can corn kernels, unsweetened
1 celery stick, chopped
225 gm can tomato paste
1 tsp brown sugar
1/2 tsp chilli powder
1/4 tsp pepper

Cooking Instructions

  1. Heat oil in large inner pot, add onion and cook till translucent.
  2. Add remaining ingredients into pot.
  3. Bring pot to boil while gently stirring. Simmer pot for 10 minutes.
  4. Return inner pot to Ecopot, with lid on.
  5. Cooking time 2 hours.

HINT … Try garnishing with a dollop of sour cream and chopped chives.
