Mashed potato with skins

Mashed Potatoes with Skins and Ground Beef with Fresh Parsley.

Ingredients

500g diced beef
2 tbsp plain flour
¼ cup olive oil
1 large brown onion, finely chopped
2 cloves garlic, crushed
1 cup fresh parsley

mash
3 tbsp milk
25g butter
3 potatoes, diced skins on
salt, to taste

Cooking Instructions

  1. Dust beef in flour, shake off excess.
  2. Heat oil and brown beef in large inner pot, remove and rest.
  3. Sauté garlic and onion.
  4. Return meat to pot.
  5. Bring to boil and gently simmer for 10 minutes.
  6. In small inner pot add all mash ingredients.
  7. Bring to boil and gently boil for 5 minutes.
  8. Transfer pots to Ecopot, lid on.
  9. Cooking time 2 hours.

HINT … Serve with a bed of mash and fresh parsley.
