Ginger chicken

Thanks again to Em from Bendigo for this one. It’s the quickest casserole we’ve ever made and the taste is great as well. Cooking in the Ecopot has never been easier.


4 chicken fillets, chopped
400 gm can tomatoes, diced
2 garlic cloves, crushed
2 onions, sliced
4 potatoes, chopped
1 parsnip, cut
1/2 tsp ground ginger

Cooking Instructions

  1. Place all ingredients in large inner pot and stir through.
  2. Bring pot to boil and simmer for 30 minutes.
  3. Transfer pot to Ecopot, with lid on.
  4. Cooking time 4 hours.

HINT … Serve with a fresh garden salad.
