Gary’s Porcupine Meatballs

Porcupine meatballs

Gary and Marg also sent us this recipe a few weeks ago, just in time for publication in the book. Seems like this couple have definitely got that magical culinary touch about them. Master Chef contestants, lookout!


600 gm mince
1/2 cup rice
1 onion, diced
400 gm can tomato soup
1 tsp beef stock
1/4 cup milk
11/4 cups water
1 tsp mixed herbs
salt and pepper to taste

Cooking Instructions

  1. In a mixing bowl, combine mince, rice, onion, seasonings and milk, forming small patties.
  2. In large inner pot, heat soup and water and bring to boil.
  3. Gently drop patties into boiling soup mix.
  4. Simmer for 20 minutes, occasionally basting patties with soup mix.
  5. Return pot to Ecopot, with lid on.
  6. Cooking time 2 hours.

HINT … Try serving with a side of steamed carrot and green and yellow beans for colour and a dollop of cranberry sauce for those with that sweet tooth.
