Cuban pork wraps

Cuban Pork Wraps.


1 kg pork medallions, sliced length ways (4 strips long)
1/2 cup lime juice
1/4 cup water
1/4 cup grapefruit juice
3 cloves garlic, minced
1 tsp dried oregano, crushed
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp ground black pepper
2 bay leaves
2 large finely sliced onions pico de gallo sauce
2 peeled and finely chopped tomatoes
2 tbsp finely chopped red onion
2 tbsp freshly chopped coriander
1 tsp lime juice
1 dash sugar lettuce
plain flour tortilla wraps philadelphia guacamole dip

Cooking Instructions

  1. Heat oil in large inner pot, add pork and cook till browned.
  2. Remove pork and let it rest for 10 minutes, retain pork juices in pot.
  3. Place onions in pot and cook till translucent and soft.
  4. In mixing bowl, combine lime juice, water, grapefruit juice, garlic, oregano, salt, cumin, pepper and bay leaves.
  5. Stir well.
  6. Add pork to onions, then cover with marinade mixture stir and place lid on.
  7. Bring to boil and simmer for 30 minutes.
  8. Transfer to ecopot, with lid on.
  9. Cooking time 3 hours.

HINT … Discarded bay leaves and shred pork into pieces before serving. Serve meat and onions in tortillas with Pico de Gallo sauce, lettuce and guacamole.
