Cheryl from Toowoomba sent us this very different vegetarian dish. We had never tried nutmeat before. It was simply delicious. Maybe there is something to being a vegetarian after all!
400 gm can sanitarium nutmeat, mashed
550 gm pasta spiral
1 tsp basil leaves, dried
400 gm can tomatoes, diced
500 gm bottle pasta sauce
1 onion, chopped fine
1 tsp garlic, crushed
1/2 tsp salt
- Place pasta, salt and basil into large inner pot, cover with water and bring to boil.
- Simmer for 5 minutes while stirring well.
- Discard water.
- Add remaining ingredients, stirring well and bring to boil.
- Simmer for 10 minutes and return pot to Ecopot, with lid on.
- Cooking time 1-2 hours.
HINT … Serve with freshly toasted and buttered soughdough bread accompanied by a side of rocket and shaved parmesan salad drizzled with balsamic reduction.
