Cheryl’s Tasty Nutmeat Pasta

Nutmeat pasta

Cheryl from Toowoomba sent us this very different vegetarian dish. We had never tried nutmeat before. It was simply delicious. Maybe there is something to being a vegetarian after all!


400 gm can sanitarium nutmeat, mashed
550 gm pasta spiral
1 tsp basil leaves, dried
400 gm can tomatoes, diced
500 gm bottle pasta sauce
1 onion, chopped fine
1 tsp garlic, crushed
1/2 tsp salt

Cooking Instructions

  1. Place pasta, salt and basil into large inner pot, cover with water and bring to boil.
  2. Simmer for 5 minutes while stirring well.
  3. Discard water.
  4. Add remaining ingredients, stirring well and bring to boil.
  5. Simmer for 10 minutes and return pot to Ecopot, with lid on.
  6. Cooking time 1-2 hours.

HINT … Serve with freshly toasted and buttered soughdough bread accompanied by a side of rocket and shaved parmesan salad drizzled with balsamic reduction.
