Angela’s Rich Beef Stroganoff

Beef strogonoff

Angela, living in the sleepy town of Grafton sent this one in. It’s a family favourite, which Angela converted, making it suitable for the Ecopot. Adding sherry gives this meal a sweet, rich and saucy finish. Thanks Angela and keep sending them in, we really appreciate it.


2 tbsp olive oil
900 gm beef, cut into thick strips
1/3 cup flour
2 onions, chopped
2 cups mushrooms, sliced
425 gm can tomatoes, diced
1/4 cup tomato sauce
2 tsp beef stock powder
2 tbsp sherry
1/4 tsp pepper
1/2 tsp paprika
1/4 tsp garlic powder
1 tsp salt
1 cup sour cream

Cooking Instructions

  1. In mixing bowl add flour, salt, pepper, paprika and mix well.
  2. Add beef strips and coat well with mixture.
  3. Heat oil in large inner pot and brown beef.
  4. Add all other ingredients to pot (except sour cream).
  5. Bring to boil and simmer for 10 minutes.
  6. Return inner pot to Ecopot, with lid on.
  7. Cooking time 2 hours.

HINT … On serving, spoon through the sour cream, blending well. Serve with oven baked crusty garlic bread.
