Thanks to Vince from Claremont in WA for this great recipe. Since buying an Ecopot at the Perth Caravan Show, Vince has cooked with his Ecopot almost every day; saving himself hundreds of dollars in reduced power bills.
PART A
680 gm beef mince, lean
50 ml white vinegar
2 tbsp chilli powder
1 tsp oregano
2 garlic cloves, minced
1 tsp salt
1/2 tsp pepper
PART B
2 onions, chopped
1 red capsicum, sliced
2 green chillies, chopped
300 gm can corn kernels, drained
1 cup macaroni, small
2 425 gm cans tomato, diced
2 tsp chilli powder
2 tsp parsley flakes, dried
1/2 tsp oregano, dried
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
2 tbsp oil
- In a mixing bowl, combine all ingredients in part A.
- In large inner pot, heat oil, add onions and cook till translucent.
- Add bowl mixture to pot and stir through till beef browns.
- Add all remaining ingredients from part B to pot, mix well and bring to slow boil.
- Simmer for 10 minutes.
- Transfer pot to Ecopot, with lid on.
- Cooking time 2 hours.
HINT … Serve on a bed of rice or some freshly cooked papadella pasta.
