Cream of Sweet Potato & Corn Soup

Sweet potato corn soup

Liam, a potato farmer from Gatton, Queensland sent in this recipe. He says after trying various ingredients, this soup really delivers the full sweet potato taste.


3 sweet potatoes (sliced)
425 gm can sweet corn kernels
1 tsp sugar
2 cups chicken stock
pinch of ground cloves
pinch of ground nutmeg
1 cup light cream
1/2 cup milk

Cooking Instructions

  1. In small inner pot, cook potatoes in chicken stock for 20 minutes.
  2. Take off heat and blend to a puree in separate bowl.
  3. Add milk, sugar and corn kernals to pot and mix well.
  4. Stir in nutmeg, cloves, and cream.
  5. Boil 3 litres of water in large pot, place small pot on top of large pot. Bring pot to boil, simmer for 10 minutes, with lid on.
  6. Transfer pot to Ecopot, with lid on.
  7. Cooking time 2 hours.

HINT … Serve with a dollop of sour cream and garnish with parsley.
