Hearty Split Pea Soup

Split-pea and ham soup

Chrissy from Merimbula, NSW sent in this great recipe. It is packed full of flavour and very nutritious.


1 kg ham hock, chopped
1 pkt dried green split peas, soaked
3 carrots, peeled and sliced
2 stalks celery, including leaves, chopped
1 bay leaf
1 tbsp salt
11/2 litres water
1 cup of chicken stock
1 medium onion, chopped
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/2 tsp fresh cracked pepper
2 tbsp oil

Cooking Instructions

  1. In large inner pot heat oil, add onion and cook until translucent.
  2. Add carrots, celery and garlic and toss for 1 minute.
  3. Add parsley and hocks toss them slowly, pour in water and mix thoroughly.
  4. Add seasoning (pepper, salt) bay leaf bring to boil.
  5. Simmer the ingredients with lid on for 30 minutes.
  6. Return large pot to Ecopot, with lid on.
  7. Cooking time 3 hours.

HINT … Serve with croutons or fresh crusty bread.
