2 tsp olive oil
900 gm stewing beef, cubed into 4cm pieces
2 onions, chopped coarsely
125 gm can tomatoes, diced
3 tbsp flour
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 1/2 tsp curry powder
2 tbsp bbq sauce
2 tsp beef stock powder
1/2 tsp sugar
- Coat beef in flour and rest for 10 minutes.
- In large inner pot heat oil, add beef and cook till browned.
- Remove beef and rest.
- Add onion to pot and cook until translucent.
- Return beef to pot.
- Add tomato, garlic, BBQ sauce, pepper and salt and bring pot to boil.
- Add curry powder, beef stock and sugar and gently stir.
- Simmer for 25 minutes, lid on. Transfer pot to Ecopot, with lid on.
- Cooking time 4 hours.
HINT … Serve with an icy cold beer.
