Rosie’s Curried Beef

Curried beef

Thanks to Rosie from Bribe Island forthis great tasting curry recipe. We felt its simplicity and economy made it a must for the book. Thanks Rosie for this real great tasting budget beater.


2 tsp olive oil
900 gm stewing beef, cubed into 4cm pieces
2 onions, chopped coarsely
125 gm can tomatoes, diced
3 tbsp flour
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 1/2 tsp curry powder
2 tbsp bbq sauce
2 tsp beef stock powder
1/2 tsp sugar

Cooking Instructions

  1. Coat beef in flour and rest for 10 minutes.
  2. In large inner pot heat oil, add beef and cook till browned.
  3. Remove beef and rest.
  4. Add onion to pot and cook until translucent.
  5. Return beef to pot.
  6. Add tomato, garlic, BBQ sauce, pepper and salt and bring pot to boil.
  7. Add curry powder, beef stock and sugar and gently stir.
  8. Simmer for 25 minutes, lid on. Transfer pot to Ecopot, with lid on.
  9. Cooking time 4 hours.

HINT … Serve with an icy cold beer.
