Deirdre’s Asian Pork Meatball Soup

Pork meatball soup

Created by Ecopot maestro Deirdre Goninon from Echuca Victoria. We see Deidre every year at the Bendigo Leisurefest and continually seek out her fantastic recipes. They never fail to please and we cant thank her enough for her support and assistance.

Ingredients

500 gm pork mince
2 garlic cloves, crushed
1 tbsp ginger, chopped fine
1 bunch bok choy, chopped
3 spring onions, sliced fine
1 egg
1 tbsp cornflour
1 tbsp sherry
1 tbsp light soy sauce
1 litre chicken stock
1 tsp sesame oil
thin rice noodles

Cooking Instructions

  1. In mixing bowl combine pork mince, garlic, ginger, egg and cornflour.
  2. Roll in to small meatballs and put aside.
  3. In small inner pot heat chicken stock, sherry, light soy sauce, sesame oil and bring to boil.
  4. Add meatballs to pot.
  5. Half fill large inner pot with boiling water. Place small inner pot into large pot, lid on. Simmer for 20 minutes.
  6. Transfer pot to Ecopot, with lid on.
  7. Cooking time 2 hours.

HINT … Serve on a bed of rice noodles. Garnish with wilted bock choy and spring onions.
