Chicken mango curry with rice noodles

Chicken and Mango Curry on Rice Noodle.


1 1/2 tablespoons olive oil
1 onion, chopped
4 tbsp curry powder
1 large mango, flesh sliced
1 teaspoon chicken stock powder
2 ripe tomatoes, chopped
1 cup (250ml) thickened cream
500g chicken thighs, cubed
1/2 cup coriander leaves, chopped
rice noodles

Cooking Instructions

  1. Heat oil in the large inner pot.
  2. Add chicken and onion, cook until brown.
  3. Add curry powder and cook, stirring for 2 minutes.
  4. Add remainder of ingredients and bring to boil and simmer for 10 minutes.
  5. Transfer pot to Ecopot, lid on.

  6. Cook rice noodles as per packet instructions

  7. Cooking time 3 hours.

HINT … Serve with rice noodles.
